研究方法は、エビに添加するナガイモの割合を段階的に変えて数種類のソフトエビを作り、テクス\nチャー測定および官能評価によって比較した。介護食品として最も適当と思われたソフトエビを使用\nして天ぷらを作製し、高齢者に試食してもらった。\n その結果、エビは加熱によって硬くなるため高齢者には敬遠されやすい食材であるが、ナガイモを\n添加することによって咀嚼しやすい軟らかさに調整できること、また、開発したソフトエビは天ぷらなど高齢者に好まれる料理に活用できることが確認できた。","subitem_description_type":"Abstract"}]},"item_3_description_7":{"attribute_name":"引用","attribute_value_mlt":[{"subitem_description":"弘前医療福祉大学短期大学部紀要,
